Fiesta Salad

Erin hosted our bookclub this month and served us a healthy and delicious dinner of Fiesta Chicken Salad.  The salad was totally delicious and had so many flavorful goodies in it, I can't wait to make it myself.   The recipe is in the comment link, saludos!

24hr Fiesta Chicken Salad
(Make 24hrs in advance and chill over night)

Ingredients in order by layers:

*Lettuce

*2-4 chicken breasts
(I boiled these for about 15min, 30min(if frozen) and then shred chicken- you can add taco seasoning to chicken or just cumin as that is all i had

*1 can of black beans

*shredded cheese

*green onions chopped

*chopped tomato

*shredded carrots or jicama

*black olives sliced

*cilantro (garnish on top)

*sliced avocado
(I added this right before serving so it doesn't brown)

*Crushed chips on top (optional)

Dressing-put on top of salad and do not toss until served

Dressing:
*1/2cup mayo
*1 1/4tsp chili powder
*clove of garlic(more if needed)
*1 can of green jalepenos

Toss salad when ready to serve and enjoy!
